Cynara Cardunculus, better known as the Cardoon, is a thistle-like plant that is related to the artichoke. It blooms in August and September with flowers in shades of blue-purple that attract masses of bees and butterflies. The striking leaves and stems of silvery green have a woolly feel to the touch.

The Cardoon is a very hardy plant and dies back in winter ready for sprouting again in spring. Place in an area with full sun. The stems, flower buds and leaf stalks can be eaten when cultivated and prepared appropriately and have a bittersweet taste.
